Avoid the stove. Just pulse these quick and delicious no-cook soups in the blender, chill and enjoy. Each soup serves 4.
Mango Coconut
- 4 cups chopped mango
- 1 cup orange juice
- 2 Tbsp lime juice
- 2 cups coconut milk
- 1 Tbsp brown sugar
- 2 tsp grated ginger
Gazpacho
- 3 cups tomatoes
- * 1 cup English cucumber
- 1/2 cup green bell pepper
- 1/2 cup red onion
- 1 jalapeño
- * 1 tsp lemon juice
- 1/4 cup olive oil
- 1 slice bread
- 1 clove garlic
- 1 Tbsp chopped parsley
- 2 Tbsp red wine vinegar
- 1 tsp hot sauce
- 1 Tbsp Worcestershire
- 1 tsp salt
- 1/2 Tbsp smoked paprika

Avocado
- 2 cubed avocados
- 1 Tbsp shallot
- 1 Tbsp lime juice
- 2 cups crème fraîche
- 1 clove garlic
- 1 tsp salt
- Pinch cayenne pepper
Cucumber Dill
- 3 1/2 cups English cucumber
- 3 Tbsp scallion
- 1 tsp lemon juice
- 1 1/2 cups sour cream
- 1 Tbsp white wine vinegar
- 1 tsp salt
- 1 Tbsp fresh dill
Blueberry Orange
- 4 cups blueberries
- 1/2 cup orange juice
- 1/2 cup buttermilk
- 1/2 cup sour cream
- 2 Tbsp agave nectar
Get creative with toppings! Try chicken, crabmeat, shrimp, sour cream, fruit, veggies or an herb such as dill or cilantro.
