No-Bake Butterscotch Cookies Recipe

Makes about 36 cookies

I’ve always liked making these for bake sales because they’re easy to make, but be aware — they go quickly! You’ll probably need to make several batches to be safe.

 

Ingredients

  • 2 cups white sugar
  • ½ cup unsalted butter
  • ⅔ cup evaporated milk
  • 1 (3.4-ounce) package butterscotch instant pudding
  • 3½ cups quick-cook oats
  • ½ cup sweetened flaked coconut

Directions

In a saucepan, bring sugar, butter and evaporated milk to a boil over medium heat. Boil for one minute. Remove from heat and stir in pudding. In a small bowl, mix together oats and coconut. Combine all ingredients. Drop by level teaspoons onto waxed paper, and let cool completely before serving.
