Makes about 36 cookies
I’ve always liked making these for bake sales because they’re easy to make, but be aware — they go quickly! You’ll probably need to make several batches to be safe.
Ingredients
- 2 cups white sugar
- ½ cup unsalted butter
- ⅔ cup evaporated milk
- 1 (3.4-ounce) package butterscotch instant pudding
- 3½ cups quick-cook oats
- ½ cup sweetened flaked coconut
Directions
In a saucepan, bring sugar, butter and evaporated milk to a boil over medium heat. Boil for one minute. Remove from heat and stir in pudding. In a small bowl, mix together oats and coconut. Combine all ingredients. Drop by level teaspoons onto waxed paper, and let cool completely before serving.

My mommy used to make this one. It was so good. She baked the cake on an old coal cook stove. She cooked the caramel glaze in an iron skillet on top of the stove.
The cheese cracker topping makes this one unique.
